It's the number of days since the Workshop "ran" if it's more than 0 it hasn't been running for however many days it says, likely because it's missing the required inputs for the type of workshop i.e. you have a pottery workshop and no village providing clay .. etc
Mount & Blade II: Bannerlord. Workshops doesn`t produce money. I bought workshop at Seonon which has two villages that produce iron ore assigned to it (one village is literaly 2 meters away from the city) and I receive only 10 gold a day. Same results in other towns in Sturgia and Battania.
